Purple and White Queen are varieties of variegated kale – it looks more like traditional cabbage compared to other kales and is obviously much more colourful, which is retained on cooking.

Variegated Kale has a strong cabbage taste, even more so than regular green kale leaves, although it does add more interesting colours to the plate.
