Hailing from Purton, Wiltshire, Eva Maddison grew up on her family farm, where food was very much a part of daily life. With a mother who is talented cook and runs her own catering company, Eva developed a love of cooking from an early age and a deep appreciation for seasonal, locally sourced ingredients, which remain at the heart of her cooking today.
Eva’s professional experience includes roles at Westerns Laundry and Petersham Nurseries, where she honed her skills in modern British and European-inspired cuisine. She also worked as Sous Chef at Giffords Circus before returning to lead the kitchen as Head Chef of Circus Sauce, the circus’ travelling restaurant, developing a style that is simple, flavourful, and full of heart.
At Circus Sauce, Eva draws on her upbringing and European techniques, describing her food as “simple, honest food, done with a lot of love.” Supported by a passionate team of chefs and servers, she brings community-focused, seasonal dining to every stop on the circus tour.

Circus Sauce is Giffords Circus’ travelling restaurant, serving dinner in a vintage-style tent after the evening performance. Menus change with the seasons and locations, always showcasing the best local and seasonal ingredients.
Guests enjoy long-table, family-style dining, with dishes that combine creativity, technique and a touch of theatrical flair. Much like the circus itself, Circus Sauce is a celebration of community, storytelling and seasonal cooking.
