Eva Maddison

Eva Maddison is Head Chef at Circus Sauce, Giffords Circus‘ travelling restaurant.

She grew up on her family farm, where food was a vital element of daily life and developed a profound love for cooking at a young age, as well as a strong appreciation for seasonal, locally sourced ingredients—principles that firmly guide her culinary practice today.

Her professional experience includes significant roles at Westerns Laundry and Petersham Nurseries, where she sharpened her skills in modern British and European-inspired cuisine. Eva served as Sous Chef at Giffords Circus before stepping up to lead the kitchen as Head Chef of Circus Sauce, the circus’s travelling restaurant. She channels her upbringing and European techniques with a cooking style that is both simple and packed with flavour that she describes as  “simple, honest food, made with a lot of love.

Circus Sauce is Giffords Circus‘ travelling restaurant, serving dinner in a vintage-style tent after the evening performance. Menus change with the seasons and locations, always showcasing the best local and seasonal ingredients.
